If you get holed, it doesn’t make a difference if you have a 50lb or 80lb line, a star, or a lever. 25 lbs of drag don’t care whether a star or a lever dialed it in.
Personally, I don’t have a strong preference for either, other than the fact that the lever is much more versatile for trolling or live lining. A drag washer or bearings can’t tell the difference. In my opinion, the majority of lost grouper are due to inexperienced fishermen, not tackling failure, especially when using live bait. Just my thoughts on the matter.

My personal favorite setup is a newer Daiwa Saltiga 40HA with a 50lb braid and a 50′ 50lb mono top shot on a 7 1/2′ Phenix Black Diamond rod. I recently took it on a Hubbard’s middle ground trip (my first) and it was the only rod I used. The Saltiga is a very well-built reel.
I also have other lighter setups, like a Shimano Torium 16 on a Crowder 7′ e-dynamic rod that I enjoy, but it might be a bit light for a middle-ground trip. I brought it along but never used it.
I hope this helps. Some people choose to go with a 2-speed reel, although they are lever drag only, which I personally don’t prefer for drift fishing.
So, I use an Avet JX Raptor on an XXH Star Paraflex spooled with an 80lb braid and a 60lb mono top shot for my grouper rod, and an Avet MXJ Raptor on an H Star Paraflex spooled with 40lb braid and a 30lb mono top shot for snapper. I’ve been very pleased with my setups. My only complaint is that I wish they made an MH, like a 12-25 class rod in the Paraflex series for mangrove fishing when they’re biting light – something with a little softer tip would be great.
I think you have a lot of good choices out there. Personally, I’d choose a star drag for bottom fishing. If grouper is on the menu, I’d go for something rugged. And if I were just starting to buy equipment, I’d pick something time-proven and versatile.
With that said, my vote goes to the Penn Baja Special/US113HN. It’s a tank with all the features you’d want in a serious bottom fishing reel, from stainless gears to dual double dogs, and carbon fiber drag, and is made in America. Plus, it can cast pretty well for what it is and would work for trolling too.
